Quality & sourcing

Protecting quality, every step of the way

Great seafood depends on where it comes from and how it’s handled after that. Here’s how we look after it.

Quality at the source in Japan

Our Japanese seafood comes from Azuma Kaisan in Tokushima, where speed from landing to processing is treated as the key to freshness. According to our partner:

  • After landing, shirasu is kept in fluid sterilised seawater ice and processed at a plant next to the port under thorough hygiene control.
  • The Wadajima plant obtained Tokushima Prefecture HACCP certification for shirasu-boshi production (March 2025).
  • The Wadajima plant was approved by the Vietnamese government as an export fishery-products facility (2024).

These certifications and approvals belong to Azuma Kaisan, not to Demeter Trading Limited.
